Butterfish – Whole, Gilled, Gutted and Scaled

Butterfish cooks well in the oven or steamed, as it is similar to a Blue Cod. Butterfish (or Greenbone) is a vegetarian and eats kelp. They are caught in the amongst the seaweed which gives it a delicate flesh and mild flavour.
